Jon and I made these peppers a couple months ago and they are by far one of our favorite recipes. I came across this gem on Pinterest, but we ended up improvising and adding a few of our own ideas.
Without further ado, here it is:
8 bell peppers
2 cups wild rice
2 lbs ground turkey
1 onion, chopped
2 garlic cloves, minced (we used 2T jarred garlic)
3T tomato paste
1t sea salt
1/2t pepper
1 jar favorite pasta sauce
Preheat oven to 350
Clean and remove the tops of the peppers, remove the middle
Lightly boil pepper in pot until soft
Cook wild rice according to package
In a skillet, cook ground turkey on medium heat; add salt and pepper
Drain any grease
Add garlic and onions to skillet and cook for an additional 2-3 minutes
Mix tomato paste and rice in skillet, followed by 3/4 cup pasta sauce
Stuff peppers with mixture and place in an 8x12 pan
Cover loosely with foil and bake for 30 minutes
We have a serious pasta sauce addiction, so once the peppers are done cooking, we add a bit extra on top.
So delicious and we didn't even add cheese!!!! Yeah, I said it - no cheese!
